Instructions
Step 1: Preheat the Oven
Preheat your oven to 200°C (180°C fan/gas mark 6) and line a 12-hole muffin tin with paper cases.
Step 2: Prepare the Dry Ingredients
In a large bowl, sift together the self-raising flour and baking soda. Stir in the chocolate chips and golden caster sugar until evenly mixed.
Step 3: Combine Wet Ingredients
Add the beaten eggs, natural yogurt, and melted butter to the dry mixture. Stir gently until just combined, being careful not to overmix; a few lumps are fine.
Step 4: Fill the Muffin Cases
Spoon the batter into the lined paper cases, filling each about two-thirds full.
Step 5: Bake the Muffins
Bake in the preheated oven for 20-25 minutes, or until the muffins are risen and golden brown.
Step 6: Cool and Serve
Transfer the muffins to a wire rack to cool, or enjoy them warm. Store any leftovers in an airtight container for up to three days.
