Step 1: Melt the Ingredients
Begin by placing butter and both types of sugar into a saucepan over low heat. Allow them to melt together gently. If you're using unsalted butter, consider adding a pinch of salt to enhance the flavors.
Step 2: Let It Cool
After the mixture has fully melted, remove the saucepan from heat and let it sit for about 10 minutes. This cooling period is crucial, as it helps prevent the eggs from curdling when they're added later.
Step 3: Prepare the Oven and Baking Tin
While the mixture cools, preheat your oven to 180°C (160°C fan/gas mark 4). Take a 23cm square tin or a 25 x 20cm baking dish and grease it well, ensuring every corner is covered. Then, line the bottom with baking parchment for easy removal of the blondies later on.
Step 4: Incorporate Wet Ingredients
Once the butter and sugar mixture has cooled, add in the eggs and vanilla extract. Use a whisk or electric mixer to beat the mixture until it’s smooth and well combined, ensuring no lumps remain.
Step 5: Add the Dry Ingredients
Next, sift the flour and baking powder into the bowl with the wet mixture. Gently fold the dry ingredients into the batter until it becomes smooth and cohesive. Be careful not to overmix. Then, fold in the chopped white chocolate, making sure it's evenly distributed throughout the batter. Pour the mixture into your prepared tin.
Step 6: Bake to Perfection
Level the top of the batter with a spatula to ensure even baking. Place the tin in the preheated oven and bake for 50-55 minutes. The blondies are done when the edges start to pull away from the sides of the tin, the top has formed a light crust, and a skewer inserted into the center comes out with a few crumbs but no wet batter.
Step 7: Cool and Store
Once baked, remove the blondies from the oven and let them cool in the tin for about 10 minutes. Afterward, carefully transfer them to a wire rack to cool completely. When fully cooled, store the blondies in an airtight container. They will remain delicious for up to three days, though they may not last that long!
