Prepare Your Tools:
- Place a small plate in the freezer. This will help you test the jam’s consistency later.
Combine Ingredients:
- In a large saucepan, add the chopped Bramley apples and caster sugar.
- Pour in 350 ml of water and stir to combine everything.
Heat the Mixture:
- Place the saucepan over medium heat.
- Bring the mixture to a gentle simmer, stirring occasionally to dissolve the sugar completely.
Cook the Apples:
- Continue to simmer the mixture gently for about 30 minutes.
- Stir regularly to prevent sticking. The apples will start to break down and collapse.
Add Flavor:
- Once the apples have collapsed, stir in the juice of ½ lemon.
- Add the cinnamon stick to the mixture.
- Allow it to simmer for an additional 2-3 minutes. This helps enhance the flavor and thicken the jam.
Test the Consistency:
- Remove the small plate from the freezer.
- Drop a spoonful of the apple mixture onto the chilled plate.
- Wait for a few seconds and then push the mixture with your finger.
- It should be fairly firm; if it runs back together, it needs more cooking.
Final Cooking if Needed:
- If the jam is still too runny, return the pan to the heat and simmer for another 10-15 minutes.
- Afterward, test it again using the chilled plate.
Jar the Jam:
- Once ready, remove the saucepan from the heat.
- Carefully pour the hot jam into clean, sterilized jars, filling them while still warm.
Seal and Store:
- Seal the jars tightly while the jam is still hot.
- Allow them to cool to room temperature.
- Store in a cool, dry place. The jam will keep for up to three months unopened.
Once Opened:
- After opening a jar, refrigerate it and use within one month.
