Soak the Noodles:
- Place 100g vermicelli rice noodles in a bowl and cover with boiling water. Let them soak for 4 minutes.
- After soaking, drain the noodles and rinse them under cold water. Drain again and set aside.
Prepare the Sauce:
- In a small bowl, mix together 1 tablespoon soy sauce, 1 teaspoon fish sauce, and 3 tablespoons oyster sauce. Set this sauce mixture aside.
Heat the Wok:
- In a large wok, heat 2 tablespoons sunflower oil over medium-high heat.
Sauté Aromatics:
- Add the chopped spring onions, minced garlic cloves, and deseeded chopped red chili to the wok.
- Stir-fry for 20 seconds until fragrant.
Add Vegetables:
- Add the thinly sliced shiitake or chestnut mushrooms and 200g broccoli florets to the wok.
- Stir-fry for 1 minute until the vegetables start to soften.
Incorporate Pak Choi and Sauce:
- Add the roughly chopped pak choi and the sauce mixture to the wok.
- Stir well and cook for about 2 minutes over high heat. If the sauce becomes too thick, add a splash of water to loosen it.
Mix in the Noodles:
- Add the soaked vermicelli noodles to the wok. Remove from heat and toss everything together until well combined.
Serve:
- Serve the stir-fry in warmed bowls. Enjoy your meal using chopsticks!
