Experience a speedy twist on Chinese scrambled eggs! In just 10 minutes, whip up this dish with your choice of protein—whether it’s prawns, chicken, tofu, or char siu pork—making it a versatile and satisfying meal option.

Step 1: Heat the Wok
- Preheat the Wok
- Place a wok over medium-high heat. Allow it to heat up until hot.
Step 2: Cook the Protein
Add the Oil
- Pour in 2 tbsp groundnut oil.
Add Protein
- Add 150g of your chosen protein (raw king prawns, cooked chicken, char siu pork, or tofu) and spread it out evenly across the bottom of the wok.
Brown the Protein
- Cook until the protein begins to brown, stirring occasionally.
Step 3: Add Vegetables
Add Onion
- Add 1 small white onion, sliced, to the wok.
- Continue cooking for 1-2 minutes, stirring regularly, until the onion softens slightly.
Add Mushrooms
- Tip in 40g sliced mushrooms and stir well.
Step 4: Stir-Fry
- Add Peas and Seasoning
- When the mushrooms start to soften, add 40g peas, ¼ tsp white pepper, and ½ tsp salt.
- Stir-fry for 1 minute.
Step 5: Add Eggs
Add Whisked Eggs
- Pour in 4 whisked eggs.
Swirl the Eggs
- Instead of stirring, pick up the wok and swirl the eggs around to mix with the other ingredients.
Cook the Eggs
- As the eggs begin to set, slowly fold them into the rest of the dish. Remove from heat once they are nearly cooked through.
