    1. Prepare the Steak:
      Start by removing the thick layer of fat from the sides of the steaks and discard it. Slice the steak into long strips, about 1cm thick. Place the strips in a bowl and toss them with the cornflour and a pinch of salt and pepper for seasoning. This will help to tenderize the beef and create a nice crust when cooked.

    2. Heat the Pan:
      In a large frying pan or wok, heat the sesame oil over high heat until it’s hot and shimmering. This ensures a good sear on the meat.

    3. Cook the Beef:
      Carefully add the seasoned steak strips to the hot oil. Fry them for about 3-5 minutes, stirring occasionally, until they are golden brown on the outside. Use a slotted spoon to remove the beef from the pan and transfer it to a plate. This keeps the beef juicy and prevents overcooking.

    4. Sauté the Vegetables:
      In the same pan, add the sliced onion and peppers. Stir-fry for 6-7 minutes until they begin to soften and become slightly translucent. This will enhance their sweetness and flavor.

    5. Add Aromatics:
      Stir in the crushed garlic, grated ginger, and finely chopped chili. Cook everything together for an additional minute, stirring continuously to release their aromatic flavors.

    6. Combine Ingredients:
      Return the browned beef to the pan. Pour in the black bean sauce, rice wine vinegar, sugar, and 2 tablespoons of water to loosen the mixture slightly. Stir everything together until well combined. Allow it to simmer for a couple of minutes, letting the flavors meld.

    7. Serve:
      Once everything is heated through and well mixed, remove the pan from the heat. Serve the stir-fry in deep bowls alongside mounds of sticky rice. If desired, top with fresh coriander leaves for an extra burst of flavor.
