This healthy chicken fried rice is a quick family meal, packed with veggies and made from everyday fridge staples. Customize with leftovers for a delicious and waste-reducing dish!

Step 1: Heat the Oil
- Heat the Oil
- In a wok or frying pan, add 1 tbsp vegetable oil.
- Turn the heat to medium-high and let it warm up.
Step 2: Stir-Fry the Vegetables
Add the First Veggies
- Add 1 chopped onion, 1 chopped carrot, and 100g chopped green beans to the pan.
- Stir everything around for 5 minutes until the veggies are tender.
Add More Veggies and Chicken
- Add 1 chopped red or yellow pepper, ½ chopped broccoli, and 150g cooked chicken.
- Stir-fry for another 3 minutes until everything is mixed and hot.
Step 3: Add the Rice
- Add the Cold Rice
- Add 300g cold cooked rice to the pan.
- Stir-fry for 4 minutes, breaking up any clumps until the rice is heated and separated.
Step 4: Scramble the Eggs
Push Aside Rice
- Push the rice and veggies to one side of the pan to make space.
Add More Oil and Eggs
- Pour in another 1 tbsp vegetable oil in the empty space.
- Crack 2 beaten eggs into the pan and scramble them quickly until just set.
- Mix the scrambled eggs into the rice and veggies.
Step 5: Season and Garnish
Add Seasonings
- Stir in 1 tbsp sesame oil and 1 tbsp oyster sauce. Mix well to coat everything evenly.
Garnish
- Top with 1 sliced spring onion and 1 tsp toasted sesame seeds before serving. Enjoy your meal!
