This low-fat stir-fry features crunchy veggies and tangy oyster sauce for a quick and delicious meal!

Cook the Noodles and Vegetables:
- In a pot of boiling water, cook the medium egg noodles, broccoli florets, and baby corn for 3-4 minutes until tender.
- Drain the noodles and vegetables and set them aside.
Sauté the Red Pepper:
- In a large frying pan or wok, heat 1 tbsp of olive oil over medium heat.
- Add the sliced red bell pepper and sauté for 3 minutes until it starts to soften.
Combine Ingredients:
- Add the drained noodles, cooked vegetables, and 300g of prawns to the pan. Toss everything together to combine.
Add Sauces and Heat Through:
- Pour in 3 tbsp of tomato ketchup and 2 tbsp of oyster sauce. Stir well and heat everything through for 2-3 minutes until it's piping hot.
Tip:
If you have any leftover roast chicken, shred it and add it along with the prawns for extra flavor!
