1. Preheat the Oven
Heat the oven to 200°C (180°C fan/gas mark 6).
2. Prepare the Chips
Place the potato chips on a non-stick baking tray. Toss them with the olive oil and Cajun seasoning, ensuring they are well coated. Spread the chips out in a single layer on the tray.
3. Bake the Chips
Pop the baking tray in the oven and bake for 20-25 minutes, turning the chips once halfway through, until they are golden and crispy. Season to taste.
4. Make the Dressing
While the chips are baking, mix the mayonnaise, chopped chives, and Dijon mustard in a small bowl. Season to your liking.
5. Assemble the Sandwich
Spread the mayonnaise mixture on 2 slices of toasted bread. On one slice, layer the radishes and avocado. Place the other slice on top, spread-side up, and add the salt beef and Little Gem lettuce. Top with the final slice of bread.
6. Cut and Serve
Cut the sandwich into manageable pieces and secure with cocktail sticks if desired. Serve the sandwich alongside the Cajun fries. Enjoy!
