Step 1: Prepare Your Ingredients and Equipment
- Get everything ready before starting. Crack the 3 eggs into a bowl and lightly beat them with a fork. You don’t need to whisk them too thoroughly—just enough to break them up and mix slightly.
- Gather your herbs (chives, tarragon, chervil or parsley) and cheese (Parmesan and Gruyère), and have them ready to go.
- Heat a 20cm non-stick frying pan on medium heat.
Step 2: Warm the Pan and Butter
- Once the pan is warmed, drop one knob of butter into it. Let it melt and bubble without allowing it to brown. The butter should create a slight sizzle but remain golden.
Step 3: Add the Eggs to the Pan
- Season the beaten eggs with freshly grated Parmesan, salt, and pepper. Then, pour the mixture into the pan, making sure it covers the bottom evenly.
Step 4: Begin Cooking the Eggs
- Let the eggs cook for a few seconds until they start to bubble slightly. Using a wooden spatula or fork, gently pull the cooked edges towards the center, letting the uncooked egg flow to the edges. Continue this for a few seconds.
- After the initial folding, let it sit for another few seconds to allow the uncooked parts to firm up, then stir again gently to combine any uncooked egg. When the eggs are about halfway set, start stirring a bit faster, but leave some of the egg slightly uncooked on top.
Step 5: Settle and Final Cook
- Once the eggs are mostly set, but still soft on top, gently shake the pan back and forth to even out the omelette. It should easily slide in the pan and have a soft, moist appearance on top. A quick burst of heat will slightly brown the bottom.
Step 6: Fold the Omelette
- With the pan tilted away from you, allow the omelette to slide down towards the edge of the pan. Use your fork to fold the nearest third of the omelette over itself. Continue rolling the omelette until it is fully rolled onto the edge of the pan and onto your plate. You can also fold it in half if that’s easier for you.
Step 7: Finishing Touches
- For a neat presentation, cover the omelette with a piece of kitchen paper and gently press to plump it up.
- Rub the second knob of butter over the omelette to glaze the surface, adding extra richness.
Step 8: Serve Immediately
