Step 1: Cook the Onions
Heat olive oil in a non-stick frying pan over medium heat. Add the sliced onion and sauté for about 15 minutes until they are soft and translucent. If the onions begin to stick, add a splash of water to keep them moist.
Step 2: Add Garlic and Mushrooms
Stir in the crushed garlic and cook for an additional 2-3 minutes. Next, add the butter and let it melt. Once it starts to bubble, add the sliced mushrooms and cook for about 5 minutes until they are tender. Season with salt and pepper, then set the mixture aside on a plate.
Step 3: Flour the Steak
In a bowl, mix plain flour with a good pinch of salt and pepper. Dredge the steak strips in the seasoned flour until evenly coated.
Step 4: Brown the Steak
Return the pan to the heat, adding more oil if needed. Fry the floured steak for 3-4 minutes, cooking until well-browned on all sides.
Step 5: Combine Everything
Add the sautéed onion and mushroom mixture back into the pan with the steak, stirring to combine.
Step 6: Make the Sauce
In a separate bowl, whisk together the crème fraîche, mustard, and beef stock until smooth. Pour this sauce over the meat and vegetables in the pan. Cook over medium heat for about 5 minutes, allowing the flavors to meld.
Step 7: Serve and Enjoy
Garnish with chopped parsley and serve the beef stroganoff hot, paired with pappardelle or rice for a hearty meal.
