These Italian calzones are a fantastic vegetarian option for a quick weeknight dinner. Filled with flavorful artichokes and olives, they come together effortlessly using a store-bought bread mix, saving you time without sacrificing taste. Perfect for a satisfying meal any day of the week!

Step 1: Preheat the Oven
- Set the Temperature:
- Preheat your oven to 220°C (200°C for fan ovens) or gas mark 7.
Step 2: Prepare the Filling
Heat the Oil:
- In a frying pan, add 1 tablespoon of olive oil and heat over medium heat.
Cook the Artichokes:
- Add the drained and sliced artichokes (from the can) and the chopped rosemary to the pan.
- Sauté for a few minutes until the artichokes turn slightly golden.
Mix the Ricotta:
- In a separate bowl, combine ½ tub (125g) of ricotta cheese with 2 crushed garlic cloves.
- Season with salt and pepper to taste. Mix until smooth.
Step 3: Prepare the Dough
Make the Bread Mix:
- In a large bowl, empty the 300g bread mix and follow the package instructions to prepare the dough.
Divide the Dough:
- Once mixed, divide the dough into 4 equal balls.
Roll Out the Dough:
- On a lightly floured surface, take one dough ball and roll it out into a circle about 20cm in diameter. Repeat with the remaining dough balls.
Step 4: Assemble the Calzones
Spread the Ricotta:
- On one side of each rolled-out dough circle, spread a layer of the ricotta mixture.
Add the Fillings:
- Scatter some sliced green olives, the sautéed artichokes, and chopped rosemary over the ricotta.
- Top each with diced mozzarella (125g in total).
Seal the Calzones:
- Brush the edges of the dough with a little water to help seal them.
- Fold the uncovered half of the dough over the filling to create a half-moon shape.
- Press the edges firmly together to seal, ensuring no filling escapes.
Step 5: Bake the Calzones
Prepare for Baking:
- Place the calzones on a baking sheet lined with parchment paper.
Bake:
- Bake in the preheated oven for 12-15 minutes, or until they are puffed up and golden brown.
Step 6: Serve
- Cool and Serve:
- Once baked, remove the calzones from the oven and let them cool slightly.
