    1. Soak the Gelatin:

      • Place 3 gelatin leaves in a small bowl of cold water. Let them soak for about 5 minutes until softened.
    2. Prepare the Cream Mixture:

      • In a medium saucepan, combine 450ml double cream, 200ml whole milk, and 100g white caster sugar.
      • Split 1 vanilla pod down the middle and use the back of a knife to scrape out the seeds. Add both the seeds and the pod to the cream mixture.
    3. Heat the Mixture:

      • Heat the saucepan over medium-low heat. Stir gently until the mixture is hot but not boiling. You want it steaming and warm, which helps to dissolve the sugar.
    4. Dissolve the Gelatin:

      • Remove the softened gelatin leaves from the water, squeezing out any excess liquid.
      • Add the gelatin to the hot cream mixture, one leaf at a time, stirring continuously until fully dissolved.
    5. Cool the Mixture:

      • Remove the saucepan from the heat and let it sit for 20-30 minutes. By this time, the vanilla pod should be suspended in the mixture.
    6. Strain and Pour:

      • Strain the mixture through a fine sieve into 6 serving glasses or ramekins to remove the vanilla pod and any lumps. This ensures a silky texture.
    7. Chill:

      • Cover the glasses with cling film and refrigerate for at least 3 hours, or until set.

    Strawberry Sauce Steps:

    1. Prepare the Strawberries:

      • In a mixing bowl, toss 400g hulled and halved (or quartered if large) strawberries with 1½ tsp cornflour and 50g white caster sugar.
    2. Cook the Strawberries:

      • Transfer the strawberry mixture to a saucepan. Place over medium heat and cook for 4-5 minutes. Stir gently until the juices are released and begin to thicken, and the strawberries soften.
    3. Cool the Sauce:

      • Once the sauce has thickened, remove it from the heat and set aside to cool completely.
    4. Top and Serve:

      • Once the panna cotta has set, top each glass with the cooled strawberry mixture. Chill again until you’re ready to serve.
