Prepare these delicious fritters for your next picnic! They’re a family favorite and can be served with yogurt, or alongside a fresh salad or poached eggs for a tasty brunch option.

Step 1: Prepare the Courgette
Grate the Courgettes:
- Take 3 courgettes and use a box grater or food processor to grate them into a bowl.
Add Salt:
- Sprinkle 1 teaspoon of salt over the grated courgette.
- Mix well using your hands or a spoon.
- Let it sit for 1 hour. This helps draw out moisture.
Drain the Liquid:
- After an hour, pour the courgette into a colander (or sieve) to drain.
Squeeze Out Extra Liquid:
- Place the drained courgette in a clean tea towel.
- Twist the towel to squeeze out as much liquid as possible.
- Transfer the dried courgette back to a clean bowl.
Step 2: Mix the Fritter Ingredients
Add Feta and Vegetables:
- Crumble 75g of feta cheese into the bowl.
- Add 4 finely sliced spring onions, 15g chopped parsley, and 10g chopped dill.
Combine:
- Mix everything together until well combined.
Add Flour, Egg, and Breadcrumbs:
- Sprinkle in 25g of plain flour.
- Pour in 1 beaten egg and stir.
- Finally, add 50g of breadcrumbs and mix until everything is combined.
Shape the Fritters:
- Use your hands to form the mixture into about 8 fritters (like small patties).
- Place them on a plate.
Brush with Oil:
- Lightly brush both sides of each fritter with vegetable or sunflower oil.
Step 3: Cook the Fritters
Preheat the Air Fryer:
- Turn on the air fryer and set it to 180°C. Let it warm up for a few minutes.
Cook the Fritters:
- Place the fritters in the air fryer basket in a single layer (don’t stack them).
- Cook for 12 minutes.
- After 12 minutes, use tongs to flip each fritter over.
- Cook for an additional 5-8 minutes until they are golden and firm.
Check Them:
- Make sure they look golden brown and are cooked through.
Step 4: Serve
Let Them Cool:
- Allow the fritters to cool for a minute on a plate after cooking.
Garnish:
- Serve with yogurt drizzled with a bit of olive oil on top.
- Optionally, sprinkle some black pepper for extra flavor.
