STEP 1: Prepare the Tofu
- Dry the Tofu: Start by patting the tofu dry with kitchen paper. This helps achieve a crispy texture when frying.
- Heat the Oil: In a large, deep frying pan, heat 1 tablespoon of vegetable oil over medium heat.
- Fry the Tofu: Carefully add the tofu triangles to the pan. Fry for about 3-4 minutes on each side, or until they are golden brown.
- Drain: Once cooked, use a fish slice to remove the tofu from the pan and place it on a plate lined with kitchen paper to drain any excess oil.
STEP 2: Toast the Spices
- Add More Oil: In the same pan, pour in the remaining tablespoon of oil.
- Add Spices: Scatter in the coriander seeds, cumin seeds, and crushed cardamom pods. Cook for 2-3 minutes, stirring occasionally, until the seeds start popping and become fragrant. This releases their flavors.
STEP 3: Cook the Aromatics
- Add Aromatics: Stir in the chopped ginger, finely chopped onion, and roughly chopped garlic. Cook for 10-12 minutes, stirring regularly, until the onions are golden around the edges.
- Add Spinach: Reduce the heat to low and add the spinach in batches, stirring each handful until it wilts before adding more. Once all the spinach is added, remove the pan from the heat.
- Blend the Mixture: Transfer the spinach mixture to a high-powered blender. Add the chopped coriander and 300ml of water. Blitz until completely smooth.
- Return to the Pan: Pour the blended mixture back into the pan. Season with salt to taste and bring to a gentle simmer over low heat.
STEP 4: Finish the Curry
- Add Tofu: Gently tip the fried tofu back into the pan. Cook for an additional 4-5 minutes, allowing the tofu to warm through in the sauce.
- Final Seasoning: Taste the curry and adjust the seasoning if needed.
- Serve: Spoon the curry over prepared wild rice and scatter fresh coriander leaves on top for garnish. Enjoy your flavorful, meat-free meal!
