Step 1: Prepare the Dough
Mix the Flours:
- In a large mixing bowl, combine 200g '00' flour, 100g semolina flour, and ½ teaspoon of salt.
Add Water:
- Gradually pour in 175ml of water.
Form the Dough:
- Mix the ingredients together until they form a soft dough.
Knead the Dough:
- Transfer the dough onto a lightly floured surface.
- Knead for about 5 minutes, until the dough is smooth and elastic.
Rest the Dough:
- Wrap the kneaded dough in cling film and let it rest for 30 minutes.
Step 2: Preheat the Oven
Prepare Baking Equipment:
- While the dough is resting, place a pizza stone or one or two large baking trays in the oven.
Heat the Oven:
- Preheat the oven to 240°C (220°C for fan ovens) or gas mark 9, or as high as it will go.
Step 3: Shape the Dough
Divide the Dough:
- After resting, divide the dough into 8 equal portions.
Shape into Balls:
- Roll each portion into a ball.
Roll Out the Dough:
- On a floured surface, take one ball and roll it out very thinly into a rough circle about 20-22cm in diameter.
- Repeat for all dough balls, rolling them out one at a time.
Step 4: Prepare for Baking
Cut Baking Parchment:
- Cut out 8 squares of baking parchment slightly larger than the dough circles.
Assemble the Breads:
- Place each rolled-out dough circle on a piece of baking parchment.
- Brush the tops lightly with olive oil.
Step 5: Bake the Breads
Bake in Batches:
- Carefully transfer the baking parchment with the dough circles onto the hot pizza stone or baking tray.
- Bake 1 or 2 breads at a time for 6-8 minutes, or until they puff up, are golden brown, and crisp.
Cool the Breads:
- Once baked, remove the breads and place them on a wire rack to cool while you bake the remaining dough circles.
Step 6: Final Touches
Warm Through:
- After all the breads are baked and cooled, pop them back in the oven for 1 minute to warm through.
Add Toppings:
- Remove from the oven and top each bread with a slice of wild garlic butter and a sprinkle of flaky sea salt.
