Ingredients

    Instructions

    Step 1: Marinate the Lamb
In a spacious mixing bowl, combine the crushed garlic, finely grated ginger, and turmeric with the lamb chunks. Mix well to ensure the meat is thoroughly coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or preferably overnight, to allow the flavors to meld.

    Step 2: Toast the Spices
Take a dry frying pan and place it over low heat. Add the spice mix ingredients and toast for about 12 minutes, stirring occasionally until they become fragrant. Once cooled, grind the toasted spices into a fine powder using a spice grinder or mortar and pestle. Set this aromatic blend aside for later use.

    Step 3: Sauté Aromatics
In a large, heavy-bottomed saucepan, heat the oil over medium heat. Add the curry leaves and finely chopped onions, sautéing for about 15-17 minutes until the onions are soft and golden brown.

    Step 4: Brown the Lamb
Add the marinated lamb to the pot and cook for an additional 10 minutes, stirring occasionally to ensure even browning.

Step 5: Add Spices and Simmer
Stir in the ground spice mix and increase the heat slightly. Cook for about 5 minutes, stirring continuously to release the full flavors of the spices. Pour in the lamb stock and season with salt and pepper to taste. Bring the mixture to a boil, then reduce the heat to a gentle simmer. Cover the pot and let it cook for 40 minutes, stirring halfway through.

    Step 6: Add Potatoes
After 40 minutes, add the potato chunks to the curry and continue to simmer for another 15 minutes.

Step 7: Finish with Coconut Milk
Stir in the coconut milk and tamarind paste, allowing the curry to simmer uncovered for 10 more minutes. This will help the sauce thicken and develop a rich flavor.

    Step 8: Serve
Serve the curry warm alongside fluffy rice or freshly made roti. Enjoy the comforting and aromatic flavors of your delicious lamb curry!
