    1. Prepare the Coating:

      • In a large dinner plate, combine 60 g cornflour, 1 tsp smoked paprika, ½ tsp dried mixed herbs, 1 tsp salt, and ¼ tsp freshly ground black pepper.
      • Mix well and spread the mixture evenly on the plate.
      • Coat the fish fillets on both sides in the flour mixture, ensuring an even coating.
    2. Cut the Potatoes:

      • Wash and cut the 3 medium potatoes into 1 cm-thick chips using a large, sharp knife. You can leave the skin on or peel them, based on your preference.
    3. Prepare the Chips:

      • Place the cut chips in a large mixing bowl. Add 2 tbsp vegetable oil, along with a good pinch of salt and pepper.
      • Toss the chips until they are evenly coated in oil and seasoning.
    4. Cook the Chips:

      • Preheat your air fryer to 200°C.
      • Cook the chips for 18-22 minutes, turning them halfway through or shaking the air fryer basket to ensure even cooking. They should come out crispy and golden. If you prefer to cook them in the oven, see the tip below for instructions.
      • Keep the chips warm while you cook the fish, or use a second air fryer basket if available.
    5. Prepare the Fish:

      • Spread 4 tbsp vegetable oil on another large dinner plate. Dredge the coated fish fillets in the oil, ensuring they are well covered.
      • Set the air fryer to 200°C and cook the fish for 8-10 minutes, turning them halfway through. Cooking time may vary depending on the size of the fillets.
    6. Serve:

      • Serve the fish and chips with mushy peas and tartar sauce, if desired. If you’re freezing any leftovers, defrost them fully in the fridge before reheating in the oven until piping hot.

    Tips

    • For Hob Cooking:

      • Heat a frying pan over medium heat with enough oil to cover the bottom in a thin layer.
      • Once hot, carefully place the coated fillets in the pan; they should sizzle slightly.
      • Fry for about 3-4 minutes on each side until crisp and golden. Transfer to a plate lined with kitchen paper to drain excess oil.
    • For Oven Cooking:

      • Preheat the oven to 220°C (200°C fan) or gas mark 7.
      • Boil the chips in a pan of water for 3 minutes, then drain.
      • Oil a large baking tray with about 4 tbsp of oil, add the chips, season with salt and pepper, and turn until coated.
      • Bake for 20-25 minutes, turning halfway, until golden and crisp.
