Preheat the Oven: Set your oven to 180°C (160°C fan) or gas mark 4.
Prepare the Fish: Take half of the ginger and place it inside the cavity of the whole sea bass.
Create a Foil Bowl: Lay the fish on a large piece of foil. Pull up the sides of the foil around the fish to create a bowl-like shape.
Add Water for Steaming: Pour 1 tablespoon of water into the foil bowl to help steam the fish. Seal the foil tightly to trap the steam inside.
Cook the Fish: Place the foil-wrapped fish in the oven. Bake for 20-25 minutes or until the fish flakes easily with a fork. Alternatively, you can use a large bamboo steamer over boiling water.
Transfer to Serving Platter: Carefully unwrap the foil and transfer the fish to a serving platter, leaving the juices in the foil.
Make the Sauce: In a saucepan, combine the light soy sauce, dark soy sauce, vegetable oil, palm sugar, and an additional 1 tablespoon of water. Heat until it reaches a boil and starts bubbling.
Garnish the Fish: Top the cooked fish with the sliced spring onion, finely sliced chilli, most of the remaining coriander, and the rest of the ginger.
Add the Hot Sauce: Pour the boiling sauce over the fish to enhance the flavors and slightly cook the aromatics on top.
Serve: Scatter any leftover coriander stalks on top and serve immediately. Enjoy your flavorful steamed sea bass!
