    Step 1: Prepare the Egg Whites

    • Place the two egg whites in a small bowl and put it in the freezer for 10 minutes. This helps the edges begin to freeze slightly, making them easier to whip.

    Step 2: Make the Batter

    • In a medium bowl, combine one egg yolk, 25g natural full-fat yogurt, and 70g whole milk. Mix thoroughly until well blended.
    • Sift in 70g plain flour and whisk until smooth. Add ¼ tsp vanilla extract to the mixture; it should resemble a runny custard.
    • Fill a larger bowl with ice and set the medium bowl with the batter on top to keep it cold while you prepare the meringue.

    Step 3: Incorporate the Butter and Egg Whites

    • Melt 13g unsalted butter in a pan over low heat. Once melted, pour it into the flour mixture while whisking lightly until just combined.
    • Remove the egg whites from the freezer and place them in a stand mixer. Begin whisking briefly, then gradually add 25g caster sugar. Continue whisking for about 3 minutes until you achieve a fluffy meringue.
    • Gently fold the meringue into the flour mixture using a large metal spoon or spatula, being careful not to over-mix.

    Step 4: Cook the Pancakes

    • Heat a drizzle of oil (or mist with spray oil) in a large lidded frying pan over low-medium heat. Wipe out excess oil with kitchen paper to ensure even cooking.
    • The pan should be hot enough to cook the pancakes but not so hot that it burns them on the outside before they are cooked through.
    • Spoon the batter into a piping bag with the tip cut off, aiming for about a 1.5cm hole. Pipe a circle of batter into the hot pan, then pipe concentric circles on top until the pancake is about 5-8cm high.
    • Cover the pan with a lid and cook for 3 minutes. Carefully flip the pancake and cook for another 3 minutes. Repeat with the remaining batter.

    Step 5: Serve

    • Once cooked, divide the fluffy pancakes onto plates and serve with your favorite toppings such as butter, maple syrup, honey, berries, or whipped cream. Enjoy your delicious creation!
