    Step 1: Cook the Base Vegetables
    In a large saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onions, carrots, and celery to the pan. Gently cook for about 20 minutes, stirring occasionally, until the vegetables are soft and translucent. If the vegetables begin to stick to the bottom of the pan, add a splash of water to loosen them.

    Step 2: Enhance the Flavor
    Once the vegetables are softened, add 2 tablespoons of sugar to balance the flavors. Stir in the 4 crushed garlic cloves, 2 tablespoons of tomato purée, 2 bay leaves, and a few sprigs of thyme. Add the 3 chopped courgettes and continue to cook for an additional 4-5 minutes. This step helps the vegetables caramelize slightly, enhancing their flavor.

    Step 3: Add Beans and Tomatoes
    Pour in the contents of a 400 g can of drained butter beans and a 400 g can of chopped tomatoes. Then, add 1.2 liters of vegetable stock to the pot. Stir well to combine all the ingredients. Increase the heat to bring the mixture to a gentle simmer. Allow it to simmer uncovered for about 20 minutes, stirring occasionally.

    Step 4: Freezing Option
    If you plan to freeze the soup for later use, allow it to cool completely. Once cooled, transfer the soup to freezer-safe containers, leaving some space at the top for expansion. Seal tightly and freeze for up to three months.

    Step 5: Cooking the Pasta
    If you're ready to enjoy the soup, add half of the 100 g grated Parmesan cheese to the pot. Then, stir in 140 g of small pasta shapes. Continue to simmer for an additional 6-8 minutes, or until the pasta is cooked al dente, stirring occasionally to prevent sticking.

    Step 6: Final Touches and Serve
    Once the pasta is cooked, sprinkle the remaining grated Parmesan on top and stir gently. Garnish each serving with a handful of shredded basil for a fresh finish. If you previously froze the soup, ensure it's completely defrosted before reheating, then proceed to add the pasta and cheese as described. Serve hot, paired with crusty bread if desired. Enjoy!
