Step 1: Preheat the Oven
- Heat the Oven: Preheat your oven to 200°C / 180°C fan / gas mark 6.
Step 2: Prepare the Steak
- Heat the Griddle Pan: Place an ovenproof griddle pan on high heat until it’s very hot.
- Season the Steak: Generously season the 700g T-bone steak on both sides with salt and pepper.
- Add Aromatics: Rub both sides of the steak with the 2 crushed garlic cloves, ½ small bunch of thyme, and ½ tablespoon olive oil.
Step 3: Sear the Steak
- Char the Underside: Place the seasoned steak in the hot griddle pan. Sear for 2 minutes or until griddle lines appear on the underside.
- Brown the Other Side: Turn the steak over and brown the other side. Rub the top again with thyme and place the thyme and garlic on top of the steak.
Step 4: Render the Fat
- Cook the Fatty Side: Once the steak is evenly browned with griddle lines, hold it with tongs to cook the fatty side. This will take a few minutes and helps to render down the fat until it’s soft rather than gristly.
- Lay the Steak Flat: Return the steak to a flat position in the pan.
Step 5: Add Butter and Finish Cooking
- Add Butter and Aromatics: Place the thyme, garlic, and 50g butter on top of the steak.
- Transfer to Oven: Move the pan to the preheated oven and cook for 4-5 minutes, or until the meat reaches 62-65°C on a probe thermometer (or until cooked to your desired doneness).
Step 6: Rest and Serve
- Rest the Steak: Remove the steak from the oven and let it rest for 5-6 minutes.
- Serve: Serve the steak on a cutting board or large plate in the center of the table for sharing. Enjoy!
