      • Marinate: In a mixing bowl, combine the beef with 1 tablespoon of light soy sauce, 2 teaspoons of sesame oil, 1 tablespoon of Shaoxing rice wine (or dry sherry), and 2 teaspoons of cornflour. Mix well until the beef is fully coated.
      • Rest: Allow the beef to marinate for 20 minutes at room temperature. This step enhances the flavor and tenderness of the meat.
    2. Stir-Fry the Beef:

      • Heat the Wok: Place a wok over high heat and let it heat up until it's very hot. This ensures a good sear on the beef.
