Banana Bread Made in a Slow Cooker

Pull out your slow cooker to whip up this easy banana bread. It’s perfect enjoyed on its own for afternoon tea, or you can spread a bit of butter on top for extra richness!

    Step 1: Prepare the Slow Cooker

    Line the base and about 5cm up the sides of your slow cooker with aluminum foil to create a makeshift cake tin, then cover the foil with baking parchment for easy removal. In a bowl, mash the bananas until smooth, then set aside.

    Step 2: Cream the Butter and Sugars

    In a mixing bowl, beat the softened butter and both sugars together until the mixture is light and creamy, about 5 minutes. Add one egg along with a spoonful of flour, and mix until combined. Repeat this process for each egg until all are incorporated.

    Step 3: Combine Ingredients

    Gently fold in the remaining self-raising flour and baking powder, followed by the mashed bananas. Pour the batter into the prepared slow cooker, cover with the lid, and cook on high for 4 hours. Avoid lifting the lid for at least 3 hours and 30 minutes; then, check for doneness by inserting a skewer into the center. It should come out clean. If it doesn't, replace the lid and cook for an additional 15 minutes, then check again.

    Step 4: Cool and Serve

    Once done, carefully turn the banana bread out onto a cutting board and let it cool. Serve it with a pat of butter, or enjoy it plain!
