Step 1: Cook the Eggs
Preheat the Air Fryer:
- Turn on your air fryer and set it to 180°C.
Cook the Eggs:
- Carefully place 4 eggs into the air fryer basket.
- Set the timer for 8 minutes and let them cook.
Cool the Eggs:
- While the eggs are cooking, prepare a bowl of ice-cold water.
- When the timer goes off, take the eggs out of the air fryer and immediately transfer them to the ice water. This stops the cooking process.
- Let the eggs sit in the cold water for a few minutes to cool down.
- Once cool, gently tap the eggs on a hard surface and peel them. If some white comes off, that’s okay!
Step 2: Prepare the Sausage Mixture
Gather Ingredients:
- In a large mixing bowl, add:
- 6 sausage meats (remove the skins).
- 6 rashers of finely chopped unsmoked streaky bacon.
- 8 finely chopped sage leaves (or 2 teaspoons dried sage).
- 1 teaspoon dried mixed herbs.

- Use your hands to mix everything together until fully combined.
Form the Mixture into Discs:
- Divide the sausage mixture into 4 equal parts.
- Take one part and flatten it into a disc about 10cm wide.
- Doing this on a piece of baking parchment helps prevent sticking. Repeat for the other three parts.
Step 3: Coat the Eggs
Set Up Coating Stations:
- On a flat surface, prepare three plates:
- Plate 1: Place some plain flour.
- Plate 2: Beat the remaining egg in a bowl.
- Plate 3: Add 50-75g panko breadcrumbs.

Coat Each Egg:
- Take one peeled egg and roll it in the flour to lightly coat it. This helps the sausage stick.
- Place the floured egg in the center of one sausage disc. Carefully wrap the meat around the egg, making sure it’s fully covered.
- Roll the coated egg in the flour again, then dip it in the beaten egg to coat.
- Finally, roll it in the panko breadcrumbs until well covered. Set aside and repeat for the remaining eggs.
Step 4: Cook the Scotch Eggs
Preheat the Air Fryer:
- Increase the air fryer temperature to 200°C.
Prepare to Cook:
- Lightly spray the scotch eggs with oil (optional, but it helps them crisp up).
- Place the scotch eggs in the air fryer basket, ensuring they’re not touching for even cooking.
Air Fry:
- Cook the scotch eggs for 20 minutes. Check halfway through and shake the basket gently to ensure even cooking.
Check for Doneness:
- After 20 minutes, the scotch eggs should be golden brown and the sausage meat fully cooked. If they need more time, cook for an additional 2-3 minutes.
Cool and Serve:
- Let the scotch eggs cool for a few minutes before serving. They can be enjoyed warm or chilled.
