1. Prepare the Apricots
- Melt the butter: In a medium-size frying pan, melt 1 tablespoon of butter over medium heat.
- Fry the apricots: Add the apricots to the pan, cut-side down. Fry for 2-3 minutes until golden and caramelized. Flip over and cook for 1 minute more, until lightly golden.
- Add the caramel: Pour in the caramel sauce and stir, allowing it to melt and coat the apricots. If the sauce is too thick, add a splash of water to loosen it. Keep the caramel apricots warm.
2. Prepare the Custard Mixture
- Loosen the custard: In a small bowl, mix the ready-made vanilla custard with 4 tablespoons of water to make it easier to dip the bread.
3. Make the French Toast
- Dip the bread: Dip the slices of bread into the custard mixture, turning them to coat thoroughly.
- Fry the first batch: Melt half of the remaining butter in a large non-stick frying pan over medium heat. Add half of the custard-coated bread slices to the pan, and fry for about 2 minutes on each side, until golden and crispy.
- Fry the second batch: Add the remaining butter to the pan and repeat the process with the rest of the bread slices, frying until golden and crispy.
4. Serve
- Assemble: Serve the golden French toast hot, topped with the caramelized apricots and their sauce. Enjoy your indulgent breakfast or brunch!
