Delightful White Chocolate Fortune Cookies

Make a splash this New Year's Eve with homemade fortune cookies! Though they take a bit of time, they’re a fun kitchen project that will impress your guests and bring a touch of whimsy to your celebration.

    1. Preheat the Oven:
      Set your oven to 180°C (160°C fan) or gas mark 4. Line a large baking sheet with a silicone baking mat to prevent sticking.

    2. Prepare Your Fortunes:
      Write your fortunes on small pieces of white paper, each measuring 6cm long and 1cm wide. Set them aside.

    3. Whisk the Batter:
      In a mixing bowl, use an electric whisk to combine:

      • 2 egg whites
      • 1 tsp vanilla extract
      • 3 tbsp grapeseed oil
      • ½ tbsp cold water
        Whisk until the mixture becomes frothy, about 30 seconds.
    4. Combine Dry Ingredients:
      In another bowl, mix together:

      • 100g plain flour
      • 2 tsp cornflour
      • 100g golden caster sugar
        Add a good pinch of salt, then sift this mixture into the egg white mixture. Whisk until you achieve a smooth batter.
    5. Chill the Batter:
      Cover the bowl with cling film and chill the batter in the fridge for at least 1 hour. This helps the cookies hold their shape.

    6. Shape the Cookies:
      On the prepared baking sheet, place ½ tbsp of the batter. Using a small palette knife, spread the mixture into a thin circle, about 8cm in diameter. Repeat to make a second cookie, ensuring there's enough space between them since they'll spread.

    7. Bake the Cookies:
      Bake two cookies at a time for 8 minutes, or until the edges turn golden. Be ready to shape them while they're hot.

    8. Form the Fortune Cookies:

      • Use a palette knife to carefully lift each cookie from the baking sheet and flip it over onto a cutting board.
      • Place a fortune in the center of the cookie, then fold it in half, pinching the edges to seal.
      • To shape, gently lift the folded cookie onto the rim of a mug or pan and pull the two corners down. Hold for about 10 seconds to set the shape.
    9. Cool the Cookies:
      Transfer the shaped cookies into a muffin tin to help them hold their shape while they cool.

    10. Decorate with Chocolate:

      • Melt 150g of chopped white chocolate in the microwave or over a pan of simmering water.
      • Prepare small bowls with sprinkles for decoration.
      • Dip the ends of each cooled cookie into the melted chocolate, allowing excess to drip off, then dip into the sprinkles.
    11. Let Them Set:
      Place the decorated cookies on a board to dry. Store any leftovers in an airtight container for up to three days.
