Step 1: Prepare the Tomato Mixture
In a medium bowl, whisk together:
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 tablespoon sherry vinegar
Add:
- 10g chopped chives
- 1 red chili, chopped (adjust to taste)
- 1 garlic clove, grated
Stir until well combined.
Gently fold in:
- 250g halved mixed tomatoes
Season generously with salt and pepper. Cover the bowl and let it sit at room temperature for 1 hour.
Step 2: Toast the Bread
Toast 2-3 slices of sourdough bread until golden brown and crispy.
Rub the hot toast with:
- 1 whole garlic clove
Arrange the toast on serving plates.
Step 3: Assemble the Dish
Tear 240g of fresh mozzarella into bite-sized pieces and sprinkle it over the toast.
Spoon the marinated tomato mixture generously on top of the mozzarella.
Recipe Tip: Make Chili Cocktail Syrup
In a small saucepan, combine:
- 50g caster sugar
- 50ml water
Heat over medium until the sugar dissolves.
Bring to a gentle boil and add:
- 1 finely chopped red chili
Cook for 2-3 minutes until slightly thickened.
Let it cool, then transfer to a sterilized jar. Use in cocktails for a sweet and spicy kick!
