    Step 1: Prepare the Tomato Mixture

      • 2 tablespoons olive oil

      • 1 tablespoon sherry vinegar

      • 1 red chili, chopped (adjust to taste)
      • 1 garlic clove, grated
    3. Stir until well combined.

    4. Gently fold in:

      • 250g halved mixed tomatoes
    5. Season generously with salt and pepper. Cover the bowl and let it sit at room temperature for 1 hour.


    Step 2: Toast the Bread

    1. Toast 2-3 slices of sourdough bread until golden brown and crispy.

    2. Rub the hot toast with:

      • 1 whole garlic clove
    3. Arrange the toast on serving plates.


    Step 3: Assemble the Dish

    1. Tear 240g of fresh mozzarella into bite-sized pieces and sprinkle it over the toast.

    2. Spoon the marinated tomato mixture generously on top of the mozzarella.

    1. In a small saucepan, combine:

      • 50g caster sugar
      • 50ml water
    2. Heat over medium until the sugar dissolves.

    3. Bring to a gentle boil and add:
