For a special dinner, savor this classic American cut from the sirloin. The T-bone steak features a distinctive T-shaped bone with tender meat on either side, making it ideal for sharing.

Step 1: Preheat the Oven
- Heat your oven to 200°C (180°C fan/gas mark 6).
Step 2: Prepare the Griddle Pan
- Place an ovenproof griddle pan on high heat to get it very hot.
Step 3: Season the Steak
- Season the T-bone steak generously on both sides.
- Rub both sides with the crushed garlic cloves, thyme, and ½ tablespoon of olive oil.
Step 4: Char the Steak
- Once the pan is hot, add the steak.
- Char the underside for 2 minutes, or until you see griddle lines forming.
Step 5: Brown the Other Side
- Flip the steak over to brown the other side.
- Rub the top with more thyme, then place the thyme and garlic on top of the meat.
Step 6: Render the Fat
- After browning, set the thyme and garlic aside.
- Use tongs to hold the steak upright, cooking the fatty side for a few minutes until it becomes soft and tender instead of gristly.
Step 7: Finish Cooking in the Oven
- Lay the steak flat again, placing the reserved thyme, garlic, and 50g of butter on top.
- Transfer the pan to the preheated oven and cook for 4-5 minutes, or until the meat reaches 62-65°C on a probe thermometer (or to your desired doneness).
Step 8: Rest and Serve
- Once cooked, let the steak rest for 5-6 minutes.
- Serve it on a board or large plate in the center of the table for everyone to enjoy.
