Homemade Corndogs
Prepare the Batter: In a bowl, combine the cornmeal, flour, egg, caster sugar, salt, baking powder, and milk. Whisk until the mixture is smooth and free of lumps. Carefully pour the batter into a tall jug or glass.
Skewer the Frankfurters: Insert a wooden skewer into each frankfurter, pushing it about three-quarters of the way through.
Heat the Oil: Fill a pan no more than one-third full with vegetable oil and heat it to 180°C. To test the temperature, drop in a cube of bread; it should brown within 30 seconds.
Coat and Fry: Working with one frankfurter at a time, dip it into the batter, ensuring it is completely coated. Carefully drop the battered frankfurter into the hot oil and fry for 2-3 minutes, or until the batter is crisp and golden brown. Drain on a sheet of kitchen paper.
Serve: Repeat the process with the remaining frankfurters. Serve hot with ketchup and American mustard for dipping or drizzling.
