Add a spicy twist to this classic ginger oil by including chili for extra heat. Perfectly paired with stir-fried Chinese vegetables and our one-pot crystal chicken!

Chop Ingredients: Finely chop the white parts of the spring onions, a large piece of ginger, and a whole red chili. Place them in a small heatproof dish.
Heat the Oil: In a small saucepan, heat 3 tablespoons of vegetable oil over medium-high heat. Wait until the oil is smoking hot.
Combine: Carefully pour the hot oil over the chopped ingredients in the dish. You should hear a sizzling sound—this means it’s working!
Cool and Store: Let it sit for a few minutes to cool slightly. You can cover the dish with cling film and store it in the fridge for up to a day ahead.
Serve: Use this flavorful oil to drizzle over stir-fried dishes or as a dipping sauce to add a kick!
