1. Cook the Pasta
- Bring a large pan of well-salted water to the boil.
- Add the spaghetti and cook for about 10 minutes, or until al dente. The pasta should retain a little bite.
2. Prepare the Garlic and Oil
- While the pasta is cooking, heat 3 tbsp of extra virgin olive oil in a frying pan over a medium heat.
- Add 3-4 finely chopped garlic cloves and 1/2 small red chilli (optional) to the pan.
- Sizzle for 1 minute until fragrant and the garlic is lightly golden but not browned (avoid burning the garlic, as it will turn bitter).
3. Combine Pasta and Garlic Oil
- Once the pasta is done, drain it, saving a small cup of the pasta cooking water.
- Add the drained spaghetti to the frying pan with the garlic and oil mixture.
- Toss the pasta to coat in the garlicky oil, adding a bit of the pasta water if needed to help the sauce come together.
4. Season and Serve
- Add a small handful of finely chopped parsley and season with salt and freshly ground black pepper.
- Toss everything together, and then serve immediately.
