Start your day right with sardines and tomatoes on sourdough toast. This delicious combination offers a perfect balance of protein and carbohydrates, making it an excellent choice to fuel your body before a workout.

    Step 1: Prepare the Toast

    1. Toast the Bread:

      • Take 4 slices of sourdough bread and place them in a toaster or on a baking sheet.
      • Toast until golden brown and crispy. If using an oven, set it to broil and watch closely to prevent burning. This should take about 3-5 minutes.
    2. Rub with Garlic:

      • While the toast is still warm, grab 1 garlic clove.
      • Cut it in half to expose the fresh garlic.
      • Take each half and rub it over the top of the toasted bread. This adds a lovely garlic flavor to the bread.
    3. Grate the Tomatoes:

      • Wash 1-2 large ripe tomatoes (about 120g total).
      • Using a box grater, carefully grate the tomatoes into a bowl.
      • If you prefer, you can chop them finely instead, but grating makes it easier to spread.
    4. Spread the Tomato:

      • Take the grated tomatoes and spoon them onto the toasted bread.
      • Use the back of a spoon to spread the tomato evenly over each slice, covering the surface well.
    5. Add the Sardines:

      • Open a can of 120g-140g sardines in olive oil.
      • Use a fork to carefully lift the sardines from the can, allowing any excess oil to drip off.
      • Place the sardines on top of the grated tomato, arranging them nicely on each slice.
    6. Drizzle with Olive Oil:

      • Pour a few tablespoons of the olive oil from the sardine can over the sardines and tomato on each toast.
      • This adds extra flavor and richness.
    7. Top with Vegetables:

      • Take ½ red onion and slice it very thinly.
      • Scatter the onion slices evenly over the sardines.
      • Next, take 8 pitted black olives, cut them in half, and place them on top of the onion.
    8. Finish with Parsley:

      • Rinse and chop a handful of fresh parsley until it’s finely chopped.
      • Sprinkle the chopped parsley over each toast for a fresh, vibrant touch.
    9. Serve Immediately:

      • Enjoy your sardines on toast right away while the bread is still crispy!
