1. Prepare the Bananas:- Toss with Sugar:
- In a large mixing bowl, add the quartered bananas.
- Sprinkle 2 tablespoons of light muscovado sugar over the bananas.
- Gently toss the bananas using a spoon or your hands until they are well-coated. This sugar will help caramelize the bananas as they cook.
2. Cook the Bananas:
Heat the Griddle:
- Place a griddle or a large non-stick skillet on the stove over medium heat. Let it warm up for about 2-3 minutes.
Cook in Batches:
- Once the griddle is hot, carefully add a few pieces of the coated bananas to the surface.
- Important: Don’t overcrowd the pan; cook in batches if necessary. This ensures even cooking.
Cook Until Golden:
- Let the bananas cook for 2-3 minutes on one side. You want them to become sticky and develop nice grill marks.
Flip the Bananas:
- Using a spatula, gently flip the bananas over. Cook for another 2-3 minutes until both sides are golden and caramelized.
- Tip: Keep an eye on them to avoid burning.
Keep Warm:
- Once cooked, transfer the bananas to a plate and place them in a warm oven (around 90°C or 200°F) to keep them warm while you cook the remaining batches.
3. Make the Caramel Sauce:
Combine Ingredients:
- In a medium saucepan, add the remaining 6 tablespoons of muscovado sugar, 2 tablespoons of butter, and 200ml of double cream.
Melt the Mixture:
- Heat the saucepan over low heat, stirring gently with a wooden spoon or whisk.
- Keep stirring until the sugar completely dissolves and the mixture is smooth, which should take about 5 minutes.
- Important: Do not let it boil; you just want it to melt together.
Add Sesame Seeds:
- Once the sauce is smooth, stir in the 2 tablespoons of toasted sesame seeds. This adds a lovely nutty flavor and crunch.
