Step 1:
Preheat your oven to 200°C (fan 180°C/gas mark 6). While it heats, prepare a 25cm square or 20 x 30cm rectangular cake tin by greasing it generously with butter. This will help the pudding come out easily once it’s baked.

In a large mixing bowl, combine the butter, sugar, flour, eggs, and vanilla extract. Beat the mixture until it’s smooth and creamy, ensuring there are no lumps. Once the batter is ready, spread a layer of jam evenly across the bottom of the prepared tin. Next, dollop the cake batter over the jam and carefully spread it out to cover the entire surface.
Bake in the oven for 20-25 minutes, until the sponge is golden and has risen beautifully. To check for doneness, insert a skewer into the center; it should come out clean. Serve the pudding warm, paired with custard, cream, or ice cream for a delightful finish! Enjoy every bite!
