Step 1: Peel 3 ripe bananas and place them in a large mixing bowl. Use a fork to mash the bananas until they are smooth and uniform. You can mash them to your preferred texture—whether you like a few small chunks for added texture or a completely smooth puree for a finer crumb in your cake.
Step 2: Crack 2 eggs into a separate bowl and beat them well with a whisk or fork until they are light and frothy. This step helps incorporate air into the eggs, making the cake fluffier once baked.
Step 3: Add 2-3 tablespoons of cocoa powder to the bowl with the mashed bananas and whisk thoroughly until the cocoa is evenly mixed in. Continue to whisk the mixture for 4-5 minutes to ensure the ingredients are fully incorporated and the batter is light. Add 1 teaspoon of baking powder and mix until well combined; this will help the cake rise properly as it bakes.
Step 4: Gently fold in 1/2 cup of chopped walnuts (or any preferred nuts) to add a delightful crunch and rich flavor to the cake. Mix just enough to distribute the nuts evenly throughout the batter without overworking it. Pour the finished batter into a greased or lined cake tin, using a spatula to spread it evenly.
