Prepare the base:
Begin by setting a wok or a large pan over medium heat. Add 3 tbsp oil and 2 tbsp butter into the wok. Allow the butter to melt completely. Once the butter has melted, increase the flame to high heat. Add 1 tbsp chopped garlic to the wok and cook for about 1 minute, stirring constantly. The garlic should become fragrant but not browned.Cook the onions:
Add 1 medium-sized chopped onion into the wok with the garlic. Stir the mixture and cook for about 3-4 minutes or until the onions become light golden brown in color. Be sure to stir occasionally to avoid burning.Add tomato puree and spices:
Once the onions are golden brown, add ½ cup tomato puree to the wok. Stir it in and cook for about 1 minute. Add salt to taste and mix well. Lower the flame to medium, and then add the powdered spices: ½ tsp coriander powder, ½ tsp cumin powder, and ½ tsp red chili flakes. Stir well to incorporate the spices with the tomato puree and let them cook for another 2-3 minutes on medium heat. Then, add 2 tbsp tomato ketchup to the mixture and stir again, allowing the flavors to blend and cook together on high heat for another minute.Add vegetables:
Next, add the prepared vegetables:- ½ cup sweet corn,
- 1 medium-sized green bell pepper (capsicum), chopped,
- 1 medium-sized red bell pepper, chopped,
- 1 tbsp chopped green chilies,
- 1 tbsp chopped spring onion.
Stir the vegetables into the mixture and cook for 1 minute, ensuring that the vegetables are evenly coated with the sauce. If the mixture appears too dry, you can add a splash of water (about 2-3 tbsp) to help it cook more evenly. Cook for another 2-3 minutes on high flame, allowing the vegetables to soften slightly while maintaining their vibrant color.
Add the boiled rice:
Once the vegetables are cooked, it’s time to add the 500g boiled rice. Make sure the rice is cooled and not too sticky. Add the rice to the wok, gently breaking apart any clumps. Stir well, ensuring the rice is evenly mixed with the vegetable and tomato mixture. Continue stirring gently for about 2-3 minutes to ensure the rice is well coated with the spices and sauce.Final Mixing:
