Instructions
1. Marinate the Chicken:
- In a bowl, combine 500g chicken, ½ cup yogurt, ½ tsp salt, ½ tsp pepper, ½ tsp paprika, ½ tsp cumin seeds, ½ tsp coriander powder, ½ tsp chili powder, ½ tsp chili flakes, ½ tsp chaat masala, and ½ tsp oregano.
- Mix everything thoroughly and let it marinate for 15 minutes.
2. Cook the Chicken:
- Heat 2 tbsp oil in a pan. Add 1 tbsp chopped garlic and sauté for 1-2 minutes until fragrant.
- Add the marinated chicken to the pan and cook for 10-15 minutes, stirring occasionally, until fully cooked.
3. Add Veggies:
- Once the chicken is cooked, add ½ cup chopped tomatoes, ½ cup chopped capsicum, and ½ cup chopped onions.
- Stir well and cook for an additional 3-4 minutes. Turn off the heat and set the mixture aside.
4. Toast the Bread:
- Heat ½ tsp oil on a griddle or pan. Toast the Pita/Shawarma bread on both sides until golden brown.
5. Assemble the Sandwich:
- Place the toasted bread on a baking dish. Spread 1 tbsp mayonnaise evenly on the first bread.
- Add the cooked chicken mixture on top, followed by a generous amount of mozzarella cheese.
- Place the second piece of bread on top. Spread 1 tbsp tomato paste on top of the bread and sprinkle with some extra cheese, chili flakes, and oregano.
- Garnish with capsicum and olives.
6. Bake:
- Bake the sandwich in a preheated oven at 180°C for 10 minutes or until the cheese is melted and bubbly.
