Step 1: Prepare the Potatoes
Begin by adding 3 medium russet potatoes (peeled and chopped) into a large pot of salted water. Bring the water to a boil and cook the potatoes until tender, approximately 15 minutes. Once cooked, drain the potatoes and transfer them to a large mixing bowl. Stir in 1 tablespoon butter and mash the potatoes thoroughly using a fork or potato masher. Set aside to cool slightly.
Step 2: Cook the Beef and Onions
In a large skillet, heat 1 tablespoon vegetable oil over medium heat. Add the 3 chopped onions and cook, stirring occasionally, until they become soft and translucent. Add the ¾ pound ground beef and 4 teaspoons light soy sauce. Continue to cook, stirring frequently, until the beef is browned and all excess liquid has evaporated. Once done, remove the skillet from the heat and allow it to cool slightly. Combine the beef and onion mixture with the mashed potatoes and stir until evenly incorporated.
Step 3: Prepare the Oil for Frying
In a deep skillet or wok, heat ½ cup oil over medium-high heat. The oil should be hot but not smoking, ideal for frying the croquettes.
Step 4: Shape the Patties
Using your hands, form the potato and beef mixture into 10 equally sized balls. Flatten each ball into a round patty shape, ensuring uniformity for even frying.
Step 5: Coat the Patties
Set up a dredging station. First, place all-purpose flour in one shallow dish. In the second dish, beat 2 large eggs. In the third dish, place panko breadcrumbs. Dredge each patty in the flour, ensuring it is fully coated, then dip it in the egg wash, and finally, coat it thoroughly with the panko breadcrumbs, pressing lightly to adhere.
Step 6: Fry the Croquettes
Carefully place the coated patties into the hot oil, ensuring not to overcrowd the pan. Fry the croquettes for about 3-4 minutes per side or until golden brown and crispy. Flip the patties gently with a spatula to avoid breaking them. Once fully cooked, remove the croquettes from the oil and drain on paper towels.
Step 7: Serve and Enjoy
Serve the crispy and golden Japanese Beef Patties immediately, either on their own or with your favorite dipping sauce. Enjoy the crunchy exterior and savory interior!
