Step 1: Marinate the Prawns
In a bowl, mix all the ingredients, except the ghee and frying oil. Make sure the prawns are evenly coated with the marinade. Cover the bowl and set it aside in the fridge for at least 30 minutes. This will allow the flavors to soak into the prawns.
Step 2: Prepare the Pan
Heat a tava, crêpe pan, or skillet on high heat. Once hot, lightly brush the pan with a mixture of ghee and frying oil. This ensures that the prawns will cook evenly without sticking to the pan.
Step 3: Cook the Prawns
Place the marinated prawns on the hot pan, making sure they lie flat. If there’s any leftover marinade, brush it over the prawns for extra flavor. Lower the heat to medium-high and cook the prawns for 1-1.5 minutes on one side until they turn golden and slightly charred. Flip the prawns over and cook for another 1-1.5 minutes or until they turn pink and are cooked through. Keep brushing with ghee to keep them juicy.
Step 4: Serve
Once the prawns are cooked, transfer them to a serving plate. Serve the tandoori prawns with a side of kachumber salad and a few lime wedges for a fresh and tangy kick. Enjoy your flavorful dish!
